Mushrooms: the super food you've been looking for
Mushrooms are type of fungus.., but do not worry, it does not make you sick… of course, what I am referring to are edible mushrooms not the poisonous ones. Mushroom are here even before plants exit. As they lived so long, they adapted to various environments. Which in turn, makes them able to create chemical we are in need of them.
Mushrooms been used for thousands years for it nutritional and medical benefits. Surprisingly, they found that they are able to mimic the action of lots of medicines. Here we’ll take a closer looke at some of mushrooms’ benefits and why you should consider adding them to your diet.
Nutrient dense
not mentioning that mushroom are low-calorie, with low fat and carbohydrates content. Moreover, 92% of it is water. Mushrooms are rich in copper, an extremely important mineral to finalize vitamin C complex. as it is a goos antioxidant, anti-aging, essential for collagen making and more… Furthermore, mushrooms has a good amount of selenium, a powerful antioxidant as well and needed for good, healthy liver and detoxification actions. Mushrooms has a decent amount of Vitamin D, the only vegan source that supply this vitamin, B vitamins, potassium and several amino acids… That’s why it is considered a good alternative of meat and other animal protein sources.
Mushroom benefits go beyond its nutritional profile. Mushroom has other chemicals, as mentioned above that it can mimic medicines actions. Example is beta-glucan a chemical proved its action to lower cholesterol, good for insulin resistance and considered anti tumors…

Mushroom soup recipe without cream
Equipment
- 1 blender
Ingredients
- 1 White Onion medium, chopped to cubes
- 3 cloves Garlic crushed
- 1 pack Mushrooms random cuts
- little Cilantro
- 1 tbsp Butter
- 1/2 tbsp Olive Oil
- 2 tsp Salt
- 1/2 tsp Black Pepper
- 1 tsp Garlic Powder
- 2 tsp Dried Thyme
- 2 tsp Dried Rosmery
- 2 tsp Dried Basil
- 2 tsp Dried Oregano
- 2-3 cups Water
Instructions
- Prepare and chop all the ingredients
- In a pot, add the butter with little olive oil, then add the chopped onion
- When it turns golden, add the garlic and mix
- Then add the mushroom. Saute and give it a little mix for a while and add water until it covers all the mushroom
- Add your preferred spices. I added salt, black pepper, garlic powder, dried thyme, dried oregano, dried basil and dried rosemerry.
- let it boil for 10 min
- Blend it all. Then lastly add the chopped cilantro
